2-3 dried shitake mushrooms

1 litre filtered water

1-2 tsp shoyu

soba noodles (cooked according to packet instructions)

spring onion for garnish

Place water and mushrooms in a saucepan and bring to the boil. Simmer for 10 minutes. Add shoyu to taste.

Mushrooms can be kept whole or sliced (remove stalks) and returned to the pot.

Place noodles in a bowl. Ladle broth over and serve with finely sliced spring onions.

Enjoy as a light evening meal. This can be used as a medicinal evening meal as part of a cleanse and can be eaten for three nights in a row to help relax the nervous system.
