Peanut Butter Choc-chip Bliss Balls

When you get a snack attack, these will definitely hit the spot. Sweet, gooey, nutty. Hmm.

Ingredients
1 cup almonds (activated if possible)
1/2 cup desiccated coconut
2/3 cup peanut butter
1/4 cup rice malt syrup
1 tsp vanilla
1/2 cup dark choc chips
pinch sea salt
Instructions
- Place almonds in a food processor and blitz until broken into small pieces. 
- Add the coconut, peanut butter, rice syrup, vanilla, choc chips and sea salt. Continue to blend until the mixture is well combined and sticky. 
- Use wet hands to roll spoonfuls into balls. 
- Roll balls in extra coconut or chopped nuts. 
- Store in an air tight container in the fridge to firm up. 
- Eat and enjoy.
