When you get a snack attack, these will definitely hit the spot. Sweet, gooey, nutty. Hmm.
1 cup almonds (activated if possible)
1/2 cup desiccated coconut
2/3 cup peanut butter
1/4 cup rice malt syrup
1 tsp vanilla
1/2 cup dark choc chips
pinch sea salt
Place almonds in a food processor and blitz until broken into small pieces.
Add the coconut, peanut butter, rice syrup, vanilla, choc chips and sea salt. Continue to blend until the mixture is well combined and sticky.
Use wet hands to roll spoonfuls into balls.
Roll balls in extra coconut or chopped nuts.
Store in an air tight container in the fridge to firm up.
